Chapter One Restaurant opened 13 years ago in the somewhat disadvantaged area of Dublin's North
Inner City. Akin to a Left Bank, it has taken determined effort to bring the restaurant to it's
current standing of as one of Dublin's top restaurants. Our clientele enjoy innovative & delicious
food with friendly service provided by the expert hands of Ross Lewis and Martin Corbett who have
been business partners for 13 years.
Ross is a native of Cork and, having graduated from University College Cork, he travelled to New
York where his passion for all things culinary grew. This led him to London and the famous Peter
Langan's Odins. Ross graduated the City & Guilds while there before moving to Switzerland to the
One Michelin starred Chat Botte Restaurant at the Beau Rivage Hotel in Geneva. His impressive
cooking skills were further enhanced by his year here and he returned to Ireland with the passion
& drive to open his own restaurant, which was to be Chapter One in February 1991.
Martin hails from Rosscommon and was quite literally born into catering life. His parents owned
and ran The County Hotel in Clonmel. It is here that he developed his love for the business that
was to become such an important part of his life. Determined to develop his skills to the highest
level he began his apprenticeship as a commis in Dublin's most prestigious hotel The Shelbourne.
There he began the task of learning all of those skills that would later make him renowned as one
of Dublin's leading hosts and Managers.
Chapter One has a thriving a la carte business but also caters to private & corporate functions
( private dining facilities are available ). Our recent remodelling of the restaurant has seen
the addition of an Oyster Counter & Champagne Bar with a new reception area plus a Fine Wine
Cellar. All of which serve to create an even more appealing atmosphere.
